Healthy Oat & Coconut Pancakes

Perfect for a slow start on a Sunday morning, these delicious, healthy oat and banana pancakes are the best choice for brunch. They are supper fluffy, soft and scented with a rich coconut flavour 😍.

Since I started making them, they have quickly become one of my favourite breakfast meals and I look forward to make them every week ☀️.

They’re made with oat flour, coconut rasps, oat milk, eggs, psyllium husk and coconut oil. At home we love eating them with organic apple sauce, but they also taste amazing with honey, agave syrup, chocolate spread or anything you like.
